We had the good fortune of connecting with Vinyette Knight and we’ve shared our conversation below.
Hi Vinyette, we’d love to hear more about your end-goal, professionally.
By the end of career I hope to have been on a few Food Network shows, or even have my own cooking show on television. To have published several cook books of all sorts, to have a spice and sauce line that is successful. To be a celebrity private chef that travels the world hosting private dinners and catering.
Alright, so let’s move onto what keeps you busy professionally?
I’m a Private Chef currently located in San Antonio, Tx. Some of the services that I offer are catering for any event, private dinners/parties for any occasion, meal prep and smoothies for healthy life styles, and cooking classes for adults and children. During the pandemic a lot of small businesses took a devastating hit especially those in the food service industry, I myself took a huge hit, and my business was at stand still during the first few months. The good thing about the pandemic is that it forced me to be more creative with my services, and this is where I birthed my “Dinner For Two” concept. With so many restaurants closed, or only do drive thru, and most being on lock down I thought how I could bring that 5 star restaurant experience to the comfort of your own home. So you could feel like you at a restaurant but you are in a safe covid free place and can either dress up and come in your pajamas. For the Dinner for Two it’s a 3 to 4 course meal, including wine, rose pedals and candles to help set the mood. I have a menu selection list which you choose all your courses from; such as Deep Fried Lobster, Crab Stuffed Salmon w/ Hennessy Glaze, or the crowds’ favorite Smoked Oxtails just to name a few. I have some jazz playing in the background and I serve you each course just like as if you were in a restaurant. I since then have added some packages to the “Dinner fort Two” concept. Who doesn’t love a live jazz concert in your home with live music, or couples massages, or even a fun night with girls painting. I’ve been blessed to be able to travel state to state for private dinners, this year I’ll be in Atlanta, Miami, Tennessee, Virginia, and Minnesota just to name a few.
Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I’m a seafood lover so we have to stop to get some of the best oysters in the city at .Dry Dock Oyster Bar, can go wrong with Oyster Rockefeller and wine! If not eating oysters then I’m ordering their deep fried Trout, you have not lived if you have not had their Fried Trout!! I’m a sucker for live music so to end the the night we would go to Jazz, Tx at the Pearl. WE go down to the basement of a building to this soulful Jazz bar, where the drinks are so good and live jazz band is amazing,
The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
If there is anyone that I would dedicate a shout out to it would be my Mother she is my hero, my back bone, my biggest cheerleader, my bestfriend. There isn’t enough words to express what my Mother means to me, not for what she has done for me but for who she is in my life. At the time that I decided to start my catering business my 3 children were 10 yrs old, 2 yrs old, and 5 months. Imagine trying to run a full time catering business, and a full time culinary student with 3 children, 2 of them of under 5 years old. Since day one my Mother has been there every step of the way, rather if I needed her to babysit, be my assistant for some catering gigs, be my prep chef, my counselor, my therapist whatever it was my Mother is always there, thru all the ups and downs of my career, even if she doesn’t understand or agree with my decisions no matter what she will always support me. Watching her get up every morning working hard, sometimes working 2 jobs to provide, to make sure I had all I needed, of courser there were hard times but no matter what she never once gave up or quit. That is something I take with me everyday the determination, dedication, the fight, the never give up mentality that my Mother taught me. I strive everyday to make her proud, to make her proud to brag about her daughter. I just want to say Thank you Mom, without you I honestly do not know where I would be in life!
