We had the good fortune of connecting with Mason Ho and we’ve shared our conversation below.

Hi Mason, what was your thought process behind starting your own business?
I have spent years in the (food) industry helping other people open their businesses, and knew that it was always the goal for myself. After managing several businesses and building teams to run different operations, I felt pretty comfortable in my ability to build a team that would help me achieve my goals. I knew from working corporate the general structure to follow for a successful operation, and from working at small mom and pops, i learned the intricacies of small businesses. at the end of the day a lot of people believed in my vision, and that’s what made me decide to go ahead and take the leap.

Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
Bite – Sushi and Tapas is such a crazy origin story to me, especially having lived it, we went from doing private parties, running popups out of storage closets, serving sushi in a parking lot, and weddings to a full blown restaurant operation.

we were doing all of that while working full time jobs at other restaurants, and dealing with loss in family, as well as the everyday struggles of life. there were many sleepless nights, showing up to events after working 12 hr shifts just to run the event, and still have to clean up and store everything, before going right back to work the next day.

when all is said and done, we did what we had to to survive.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
I definitely want to thank my Uncle, Donny Sirisivath, without him i don’t think i would have been able to step up into the rolls that really made me who i am. I worked at his restaurant during COVID, and got to experience the struggles of ownership through his eyes. Khao Noodle Shop for me was a major turning point that showed me that a simple dream can become something great, which is part of why the catering company is named Yume or “dream” in Japanese.
