We had the good fortune of connecting with Dayne Weaver and we’ve shared our conversation below.
Hi Dayne, how do you think about risk, what role has taking risks played in your life/career?
Taking a risk is the most important step. I was fortunate enough to have my wife encouraging me to jump off the cliff. I worked full time during the week and spent every weekend working on our business for about 1 1/2 years before I worked up the courage to quit my job. That was one year ago. Until then I was only partly committed to the dream I had for my business. I feel like you really have to fully commit before you yourself and the others in your life take you seriously.
Let’s talk shop? Tell us more about your career, what can you share with our community?
We take a very time consuming detail oriented approach to cooking barbecue. We start of by using all natural, hormone & antibiotic free meats. We make our sausage from scratch and have many different recipes that we’ve created over the years. Using a 100% wood fired offset smoker, our meats demand constant attention. Our cooking process takes 24-30 hours before our smoked meats are ready to be served. We are determined to stay true to our process and are always looking to improve our product. You have to accept that it will never be perfect, but be prepared to always work towards perfection. I’m most excited to expand our business hours. We are currently in the process of purchasing our first food trailer. With that and the addition of a 2nd offset smoker, we’ll be able to serve more people than ever. I am here today because we never gave up. I’m starting to really believe that those who are successful are the ones that refused to let go of their dream. I thought about it so much and dreamed so hard that if I never had tried, I don’t think I’d be able to live with myself. Dayne’s Craft Barbecue is really just a constant pursuit towards excellence in barbecue. Without our customers and the support of our community our dream is gone, we really owe it all to you.
If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
I’m really just a huge barbecue nerd who turned that passion into a business. So, I would have to take my friends around DFW to sample the best barbecue the city has to offer. I’m really proud to have a great relationship with other pitmasters around the state. I’d definitely take them on a BBQ road trip they would never forget.
Who else deserves some credit and recognition?
My wife Ashley Weaver deserves so much credit. I could have never had the courage to pursue this dream without her fearlessness and drive. She took notice of how passionate I was about cooking barbecue. I would always talk about how I wanted to open a barbecue place. She dared me to be great and accepted the difficult road that it would mean for our family. I owe it all to her.
