We had the good fortune of connecting with Hillary Biediger and we’ve shared our conversation below.

Hi Hillary, can you walk us through the thought-process of starting your business?
I lived in NYC for 10 years pursuing dance and theater. There were a lot of juice bars in NYC. I finally ventured into one of them and ordered a green juice. I had so much energy, after drinking it, I was practically skipping down the streets of Manhattan. I was hooked. When I moved back home, I wanted to open a juice bar so I could share how amazing raw, organic juice is. Now, 10 years later, our vegan food items have stolen the show!

Let’s talk shop? Tell us more about your career, what can you share with our community?
I grew up in ballet. I danced with the Fort Worth School of Ballet and performed at Casa Mañana in Fort Worth. I graduated from Texas Wesleyan with a degree in theater. But, what I really wanted was to be the next Whitney Houston! That’s what really got me to NYC. I spent the first 35 years of my life in music and dance.

Throughout that time I cooked a lot. I dreamed of opening a bakery but, when I found out how early you have to get to work, I dropped that idea real fast! So, I have dreamed of owning my own business for many years.

After moving back to Fort Worth, I really wanted to open a juice bar. But, in 2006…I felt it really wasn’t the time. In 2013, I started getting the itch, again, and felt Fort Worth was ready for it’s first organic cold pressed juice bar and vegan cafe. It was and Keller was next! We opened Keller one year later.

Owning your own small business certainly has its challenges and…surviving through a pandemic well, that was a miracle. And that miracle was our customers continuing to support us and helping us fight for survival. We’re glad to still be here sharing love and plants! 🙂

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I would take them to all of our beautiful museums. We have some of the best in the world! I would take them to a show at Bass Hall. The Dallas World Aquarium. A drink at Grace or Waters downtown Fort Worth. A bite a Tulum in Dallas. And, of course, take them to all the vegan spots that have opened in Fort Worth. Juice Junkies was the only all vegan joint, after Spiral Diner, in Fort Worth. Would definitely take them to Planted Bakery for a sweet treat and Pizza Verde for awesome vegan pizza!

Who else deserves some credit and recognition?
Oh gosh…so many. My sister, and co-founder, Gretchen, first and foremost. My partner in crime. I couldn’t do it without her. My boss before I opened JJs, Michael S. Thomson. I went to him, and still do, so many times asking “chefing questions.” He really showed me the ropes when it came to opening and owning a food business. All of my customers who have supported JJs all these years. And my loyal staff! They are the real super stars! They keep me sane!!
