We had the good fortune of connecting with Michael Peticolas and we’ve shared our conversation below.

Hi Michael, what habits do you feel play an important role in your work and life?
I have OCD when it comes to cleanliness. Not a bad trait when you are brewing beer as the importance of sanitation throughout the process cannot be understated. A clean brewery lays the foundation for everything that follows.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
We’re honest, friendly, down-to-earth brewers delivering world class passion in a glass. We don’t want to be big, we want to be great.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
It’s hard to narrow it down because there is so much to do. But here’s a start. Resident Taqueria for tacos. The Old Monk for an English pub experience. R+D for sushi. The Kessler Theater (or Majestic or Granada) for a show. Rodeo Goat for burgers. The arboretum for a picnic. Moody Coliseum for a basketball game. Lakewood Growler to chill with beer. Jimmy’s for sandwiches. Bubba’s for fried chicken. The Armoury for an old fashioned. Deep Ellum for food/drinks/art/walking around. Bike around White Rock Lake. Slow Bone for barbecue. GapCo for pizza. Our place for beer.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
Huge thanks goes out to the Dallas folks behind the execution of Goldman Sachs’ 10,000 Small Businesses program. During the early days of the brewery, this entrepreneurial program (a) provided a stellar crash course on all aspects associated with the operation of a small business and (b) demonstrated the effectiveness of peer learning amongst small business owners. This program has undoubtedly had the biggest impact on our business over the last 10 years.
