We had the good fortune of connecting with Kellie Seville and we’ve shared our conversation below.

Hi Kellie, what’s something about your industry that outsiders are probably unaware of?
The amount of behind the scenes that goes into every job. There is shopping that needs to be done, then you have the prepping, and then you have the presentation. Work for grazing tables/catering jobs is 10 times more involved than any board/box order. I stand in the kitchen cooking different appetizers for hours on end. I think the most tricky part is storage for 65 people and then the transportation of everything is also an art in itself!

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
I am a charcuterie specialist! I started my business in July 2021 as a luxury picnic service. I offered food and beverages with this concept. The food i offered was charcuterie of course! Once i got bookings the business really took off until the colder months came. I had to figure out a way to continue my business and not lose any growth. I focused on the charcuterie part of my business and started promoting all over social media. Thanksgiving and Christmas were coming up so the cheese exploded and i was getting orders like crazy. I found that the charcuterie was really my niche. I loved creating and being able to do so in a different way every time i looked at a board. I have officially changed my business into all things cheese! I do catering, private workshops, showers, events, boards, boxes, cones, cups, butter boards, etc. I have learned a lot during my journey so far. Figuring out cost and the amount of food to buy was one of the hardest lessons. None of this has been easy. Starting a business from the ground up has been THE hardest mountain to climb. It takes non-stop effort and time. There is never a day off. I am constantly trying to stay relevant and post on social media. Balancing my business, being a wife, and being a mother of two young children, while also working my day job is a challenge in itself. I find staying organized is the best way to overcome all of these challenges. I use my phone’s calendar and put things into IMMEDIATELY. I lean on my family during chaotic times to help me because I can’t do it all myself. I want the world to know that i truly love what i do. I live in the kitchen because to me it is happiness. I enjoy good food, and I love that I get to share that with other people. Food brings us together and people feel that when they book The Pink Cactus DFW.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
First stop would have to be The Stockyards. I love a good area to walk, drink, and eat and this is the place to do it. The next place would be downtown Fort-Worth just because the landscaping is beautiful. The different choice of good food in the area is perfect. I would show them the water gardens and then decide on a restaurant.
Going to Panther Island Brewery would be a must! Hopefully they would have some event going on so we could drink great beer and hang out. Even if they didn’t, we would have a great time playing corn hole and eating tacos from the food truck! The next day we would go to Sushi Zen in Southlake because the menu is to die for!
At some point we would make our way to Dallas, maybe go to Deep Ellum just to wander around. Go for some coffee and then find a good restaurant to eat. I would have to take my friend to Chilangos Tacos in Dallas. They are TOP NOTCH tacos. We would come back home, and just hang out. I would take my friend to the bowling alley called Bowlero. They have a wonderful Mai-tai, and I think bowling is a lot of fun!

Who else deserves some credit and recognition?
I have said this before and it deserves to be said again! My family is my number one support system. My mom sparked the business idea in the beginning and has helped me along the way. She travels with me, sits with me at markets, helps prep and shop for food. She is a financial guru so i have picked her brain a few times about accounting! My husband is wonderful and supports me 100 percent. He takes care of the kids when i am out doing business gigs, he helps deliver boards when I can’t, and he cheers me on everyday! My dad plays an important role in all of this because he watches the kids when my husband works and when my mom is with me! My kids love being with Grandpa and he really cherishes those moments also! It takes all 4 adults to make this dream happen and i am forever grateful for the family i have!
