We had the good fortune of connecting with Amy Reyes and we’ve shared our conversation below.

Hi Amy, maybe we can start at the very start – the idea – how did you come up with the idea for your business?
I was born and raised in the heart of California. As you may know, California is all about Mexican food. I started to cook birria a very long time ago, then suddenly there was a trend of quesatacos. I started to make them and it became it hit. Once I moved to Texas, I decided to open up a birria specialty food truck.

Let’s talk shop? Tell us more about your career, what can you share with our community?
I’m most proud of my cooking skills. My mom has taught me so much. She’s taught me how to add different and unique ingredient’s. My birria may not be the best, but my food speaks for itself. I make fresh beef birria on the daily basis. I used 7-9 different peppers plus 8 more ingredients.

Currently she is in hospice care in ETX. I make sure and remind her that Ive been very successful because of her. As I mention before, I’m from California. I decided to move my family here for a better life. Being new to etc I had to find what people enjoyed most to eat. People love Mexican food. My most popular item that I sell out quick besides the tacos is the birria melt. It’s a texas toast with melted crispy sharp cheddar cheese on one side and crispy melted crispy mozzarella cheese on the other with birria, cilantro, onions and salsa that is cut in half with your side of consome.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
Since I’ve been here a short time, I would say I would take her to eat some delicious Cajun food at Catch Me if You Can restaurant. They have live music on the weekend and is bring your own beer.
I would take my best friend to eat some delicious sushi at Go fish!! That’s. a must. I live right by the lake so I would definitely rent a boat and go out for a swim. Juicy j wings have delicious wings where we can eat, they usually set up at true vine brewery, they have the best bear hands down.
I have yet to explore many places in my hometown and surrounding. I guess we can explore together.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
Oh man, there’s a lot of people that deserves a shoutout to my success. First and foremost to my Lord and Savior Jesus Christ through him everything was possible. From my move to Texas to the opening of my food truck.
There’s a few people that I’m so thankful to in the food truck community. The owner of Catch me if you can restaurant and food truck, her name is Amanda. She opened up her heart to me and guided me step by step. Chef Rojo from Taqueria Rojo, was super helpful too. He’s a very busy Chef, but just to give me the time of day to also help me and giving me his insights, was amazing. Now, this food truck family has been more than just friends. They are like family. John Vasquez owns Juicy J Wings and his family and him have been beyond helpful. From helping me set up, parking my truck, letting me borrow generators when mine gives up. Every-time I was in need of help, These two food trucks owners have been my rescue 100%. Knowing that I can count on some of the food truck community means a lot.
