We had the good fortune of connecting with Melinda Hudson and we’ve shared our conversation below.
Hi Melinda, how does your business help the community?
At PREP Kitchens Dallas, our mission is to lower the barrier to entry for food entrepreneurs and create meaningful economic opportunity through culinary entrepreneurship.
We provide affordable access to licensed, fully equipped commercial kitchen space for chefs, caterers, food truck owners, bakers, and food makers who may not otherwise have the resources to open or expand their businesses. By removing the high startup costs associated with brick-and-mortar restaurants, we help local entrepreneurs test concepts, grow sustainably, and build long-term businesses.
Beyond providing workspace, PREP fosters a collaborative community where members can connect, share knowledge, and support one another as they scale. We’ve seen firsthand how that environment accelerates growth and creates stronger local businesses.
Our impact extends beyond the entrepreneurs themselves. As our members grow, they create jobs, serve neighborhoods, and contribute to the local economy. In an area like District 6—where food access and economic investment have historically been limited—we believe supporting food entrepreneurs is a powerful way to drive community revitalization and expand access to diverse local food options.
Ultimately, PREP Kitchens exists to empower small businesses, strengthen the local food ecosystem, and help build a more vibrant and inclusive culinary economy in Dallas.

Alright, so let’s move onto what keeps you busy professionally?
I’ve spent over 20 years in the service industry, working my way up from bartending into management and eventually overseeing multiple restaurant and bar operations from construction and opening through daily operations. I also hold a master’s degree in Health and Business Administration and started my own catering company, so I understand firsthand what it takes to build a food business.
That experience is what led me to PREP Kitchens Dallas. PREP was founded to remove barriers for food entrepreneurs by providing affordable, fully equipped commercial kitchen space and the resources needed to grow, helping businesses scale without the massive overhead of opening a traditional brick-and-mortar. Today, PREP operates as one of the country’s largest commercial kitchen platforms supporting culinary entrepreneurs.
What sets me apart in this role is that I truly understand our members’ journey because I’ve lived it myself. I know the sacrifices, risks, and hard work it takes to build a food business, and I genuinely care about helping our members succeed.
If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
If my best friend were visiting for a week, I’d make sure they experienced a little bit of everything that makes DFW special because there’s honestly so much to do here.
We’d start with the classics: the Dallas Arboretum, Klyde Warren Park, the museums, and a stop at Reunion Tower for skyline views. I’d take them through Uptown for great food and nightlife, then over to PREP Kitchen To Go near Love Field so they could try food from some incredible local culinary entrepreneurs.
For a more Texas experience, we’d spend a day at the Fort Worth Stockyards and visit the Japanese Gardens while we’re out there. We’d also head to Grandscape in The Colony for shopping, entertainment, and dinner.
If the weather is nice, I’d plan a boat day on Lake Grapevine and make sure we catch sunset over Lake Lewisville at least once. And of course, depending on the season, we’d have to catch a Rangers, Mavericks, Stars, or Cowboys game.

My biggest shoutout goes to our members: the chefs, food truck owners, caterers, and food entrepreneurs who trust PREP Kitchens with their businesses every day.
Their creativity, resilience, and work ethic are incredibly inspiring. Many are building their dreams from the ground up while overcoming significant challenges, and their passion is what makes our community so special. Being part of their journey and helping support their growth is one of the most rewarding parts of what I do.
