We had the good fortune of connecting with Jill Davis and we’ve shared our conversation below.
Hi Jill, what was your thought process behind starting your own business?
When we started Joe Pine Coffee Co. in 2017, we had several goals. We wanted to create a space in the Marshall community for people to gather and nurture meaningful relationships. We also loved coffee and there was not a specialty coffee shop within 30 minutes of Marshall. We wanted to elevate the coffee experience while creating an incredible space for people to gather.
What should our readers know about your business?
Joe Pine Coffee Co. is a specialty coffee shop in Marshall, Texas. We serve coffee roasted in small batches by Texas-based roasters. We craft all of our syrups in-house — our signature Mexican Vanilla latte is a huge fan-favorite. We offer seasonal drinks as well – from Whisky Pecan lattes in the fall to scratch-made blueberry lemon Italian cream sodas in the summer. We offer house-made quiche, muffins and pies. We like to highlight the East Texas and Marshall community through our merchandise. We have Marshall, Texas and ETX tees and mugs as well as pottery from locally-owned Martinez Pottery.
Our community is so supportive of our business. We like to give back as much as possible (like donating our proceeds from a whole day to Mission Marshall or offering free drinks to first responders to hosting a school supply drive). We have overcome the hurdles of navigating the covid pandemic as well as having our street closed for remodeling for several months.
Our values are lined out in the letters “ETX” and they are the heartbeat of everything we do. We believe that these values are the reason we are still open as a shop and we always go back to them whenever we dream about our future. E is for “everyone is important,” T is for “transforming community,” and X is for “experience is paramount.” We serve a really great cup of coffee — we think it is the best around — but we know that if someone comes to Joe Pine and has a terrible experience, it doesn’t matter! When you ask people about the best cup of coffee they’ve had, it always has a story to go with it. They rarely JUST describe how it tasted — but they always talk about who they were with and where they were. We want to be that place for people.
Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
Oh gosh! This is my favorite question! We think Marshall is the perfect HUB for exploring this area. For food: Pazzeria by Pietro’s, The Ginocchio (in an awesome historical building right by the train station), and Tacos Reyes! We would run out to the Bear Creek Smokehouse and Wright On Taco one day for sure. A boat tour on Caddo Lake and berry picking at Panola Orchards and Gardens would be top of the list for things to do. In town, we would hit up the Michelson Museum and visit the historical Harrison County courthouse right on the square.
Who else deserves some credit and recognition?
We wouldn’t be who are today without the support of A LOT of people. We started Joe Pine Coffee Co. with a Kickstarter campaign back in 2017. We offered several different levels of support and people came together within a month to support this new coffee shop in Marshall, Texas. Our business partners, David and Stacey Splawn, owned a shop in Plainview prior to moving to this area. Their expertise from Day 1 is one of the reasons we are able to offer a top-notch experience. Aaron Blanco at Brown Coffee in San Antonio and Jonathan Aldrich at Tweed Coffee Roasters have offered a wealth of knowledge — they are always so quick to help with equipment issues or coffee advice. The downtown business owners in Marshall, Texas are a daily support. We are like a little family down there… Joseph at Pazzeria by Pietro’s, Rob and Deb at Central Perks, Debbie Parker at Deborah’s Boutique, Suzanne Carter with 2 Funky Junkers. Our whole Marshall community along with our friends and family have been such an encouragement and support to us.
