Meet Caroline Irby | Co-Owner


We had the good fortune of connecting with Caroline Irby and we’ve shared our conversation below.
Hi Caroline, what was your thought process behind starting your own business?
Since we opened Wayward Coffee Co back in 2020, we knew we wanted it to have a unique, different sister company that reflected the same values but served a different purpose. Thus, Outpost Fine Goods is now born. Our goal with starting Outpost was to create a useful, curated general goods store in our neighborhood, that also serves as a community space. We feel we’ve done that and are so excited to see it grow.


Alright, so let’s move onto what keeps you busy professionally?
I worked many odd jobs throughout high school and college, and working in retail was something that was natural to me. I love people and truly love the idea of creating an inviting space for folks to come and enjoy, and potentially find something new that they’ll love while they’re here. Outpost is a culmination of these experiences and desires I’ve had, and it truly is a dream come true to be able to do this.


If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
If someone was visiting, I would say go to Wayward for coffee (of course), stop into Outpost and take a look around or just say howdy, then for food there’s so many good spots. Ojeda’s is the best family-run Tex-Mex joint, Mike’s Chicken for phenomenal fried chicken, La Victoria for breakfast burritos, Las Palmas for more upscale Mexican with a great vibe, and La Bodega or Shug’s for a killer sandwich or bagel. There’s also several great breweries and dive bars, including Celestial, Peticola’s, Mike’s Gemini Twin, and Lakewood Landing. We also love going over to Nylo Wool near Deep Ellum for the best vintage selection in Dallas. All in all, Dallas has a whole lot going on, but there are so many gems to be discovered and appreciated.


Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
Before opening Outpost earlier this year, I was working with Kristen McDaniel at All Good Things over in Bishop Arts for a few years and truly learned so much. Her store is such a wonderful gem and I’m so thankful for my time spent there.
