We had the good fortune of connecting with April Scott and we’ve shared our conversation below.

Hi April, can you walk us through the thought-process of starting your business?
I grew up on the East Coast and have been in Texas now for 24 years. I started East Coast Flavors for two reasons. First I missed the unique food that you find in Baltimore Maryland. Because of my love for the flavors in the dishes that were a staple in my family’s history, I decided to share those flavors with my new Texas community by opening my food truck. My menu features some of the iconic dishes that Baltimore is known for such as an authentic Maryland crabcake that features Premium lump blue crabmeat and a Baltimore signature seasoning.

Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
My brand is unique. I did two years of research on food trucks in the DFW metropolitan area before deciding to open my food truck. I am able to confidently say that there is no other food truck in DFW that serve the type of food I do on my food truck. Everything is made from scratch and fresh for each event. I have learned the importance of being different and offering something that know one else does. What I am most proud of is when I get emails or text messages requesting my services and the requestor says “ I heard your food was Amazing!”

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I would definitely take them to my favorite downtown areas which is Downtown Ft.Worth and The Bishop Arts District in Dallas. I would also take them to Modern Museum in Fort Worth and the Kimball. Six Flags over Texas is one of my favorite places as I love roller coasters. The Arlington Highlands is close to home and we would catch a comedy show at the Improv. My favorite restaurant in the DFW area is Meehans in downtown Mansfield and an area that is really developing into a place to visit for sure. The Star in Plano has a great vibe and plenty to do.

Who else deserves some credit and recognition?
Over the past 10 years I lost two Aunts my Aunt Lynn unexpectedly and Aunt Clair from Covid. Both were significant influences in my ability to cook the dishes that I do with bountiful flavors and most importantly they showed me the importance of preparing food made not only with the freshest ingredients but to pour an unlimited amount of love into them as well. I lost my mom at a very young age and my Aunts stepped up and filled the void. Their love and guidance in my life has helped to shape me to become the woman and chef that I am today. For those reasons I started East Coast Flavors as a tribute to them. I also have a tribe of ladies in my life who are supportive and encouraging to me to keep striving and thriving. I call them my TRIBE! They continue to remind me to Count everything Joy and trust God to direct my Path.
