We had the good fortune of connecting with Daniel Witcher and we’ve shared our conversation below.

Hi Daniel, we’d love to hear more about how you thought about starting your own business?
I always thought there were a lot of intriguing aspects to starting and running a business. I love that you can create a space for the community that can have an awesome environment while also providing jobs. It is a real privilege to be able to come up with a concept and be able to create and execute it. I also like that you are able to directly reap the rewards of your work.

Alright, so let’s move onto what keeps you busy professionally?
Life has definitely thrown us a lot of curveballs. My wife and I both started out in oil and gas in Houston, I am an engineer by trade and she is a CPA. We took a leap of faith to leave our jobs and life in Houston to design, build and manage short term rentals in the Texas hill county. We have gone further down the rabbit hole by creating and opening a new brewery, also in Fredericksburg. No part of it has been easy, starting our rentals right as a worldwide pandemic hit, and dealing with the endless change orders that are required when starting a brewery on a tight budget, but it has taught us that we can work through issues together. For any prospective entrepreneurs, we think it is worth taking the risk if you are prepared and have a passion for what you are trying to do.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
Fredericksburg is an ever-evolving town. Forty years ago it was not known for much except for the German heritage and amazing people. Later it was antiques and peaches, and now it has become known for the shopping, restaurants and wine. I would tell someone visiting, first and foremost, to visit some of our amazing restaurants and wineries. Some of our favorites are Otto’s, Allá campagna, Cabernet grill, and Granite House. There are some great wineries in the area, including William and Chris, Lost Draw, Ab Astris and Signor. Take a walk down Main Street, or drive out to enchanted rock for a hike. And don’t forget to check out Witcher Brewing Company.

Who else deserves some credit and recognition?
My wife Callie is equally responsible for the success of any venture we do. Besides being most the creative energy, she really sets the goals and holds me accountable to deliverables. I have a tendency to go too broad and try to change our projects or keep adding things, and she keeps us true to the vision. She also has a really great eye and is more in tune to what customers are looking for.
