We had the good fortune of connecting with Courtney Anderson and we’ve shared our conversation below.
Hi Courtney, what was your thought process behind starting your own business?
During my undergraduate degree and dietetic internship, I knew outpatient nutrition care had a special place in my heart, specifically outpatient care for the prenatal and postpartum population groups. When I became a registered dietitian and started applying for jobs, I was disappointed at the lack of opportunities for outpatient dietetics in my area. I saw a gap in nutrition care, so I decided to fill it. My goal is to offer the ultimate nutrition experience for mother and baby- including prenatal nutrition education and breastfeeding classes during pregnancy, then postpartum nutrition education and infant feeding assessments after delivery, while moving on to early feeding and pediatric nutrition when the infant starts solid foods.
Alright, so for those in our community who might not be familiar with your business, can you tell us more?
My practice is unique because it is built around the unity of medical nutrition therapy with the principles of Intuitive Eating and Health At Every Size. In our modern culture- where calories and chemicals are counted, and nutrients and true health are too often overlooked- disordered eating patterns are the norm. Medical nutrition therapy is traditionally reserved only for clinical dietetics, while principles of Intuitive Eating and Health At Every Size are typically only seen in eating disorder therapy. However, I believe that there is space for all three in outpatient nutrition care, as each brings something unique to the table. When used in tandem, this combination of dietary approaches addresses the whole person- the physical, mental, and social aspects of food and nutrition. While feeding ourselves well is a simple concept, our culture and the media has made it confusing, complicated, and often contradicting. Nutrition counseling with Courtney Anderson will provide you with a clear plan to understand your unique nutrient needs to treat illness, manage symptoms, and improve your quality of life. Together, we can make you feel confident in your health and comfortable in your own skin.
Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I grew up in Coppell, a suburb of Dallas. If I had a friend visiting there, I would defiantly take them for dinner/ drinks at The Sound! My favorite restaurant is Ascension, they offer amazing food that is both delicious and nutrient-dense. During the day we would drive over to Grapevine Lake where we could wakeboard, or rent paddle boards and kayaks. My favorite thing on Grapevine Lake in the summers growing up was the weekly firework shows on Fridays! I currently live and work in Waco, TX. Here, my favorite restaurant is Revival: Eastside Eatery. Their menu is made mostly from local ingredients, and they offer everything from juicy burgers to killer gourmet salads. They also have a weekly homemade mousse flavor! I love it because no matter who you are eating with, they will find something they fits their taste on the Revival menu. For fun, we would hike in Cameron Park, rent paddle boards on the Brazos River, or attend a Baylor game!

To my husband, Ty, who encouraged and supported me throughout my years in higher education; who sacrificed his own time, desires, and resources to make this degree possible. Thank you for always believing in me and helping me to see everything that I was capable of. To my parents, Jeff and Kathy, who raised me to be hard working, committed, level-headed, and to chase my dreams; who made sacrifices my entire life so that I could achieve great things. Thank you for loving and supporting me, everything I am today I owe to you. To my professors, mentors, classmates, and friends who provided both challenges and joy in the day-to-day life in college and graduate school. Thank you for making my Baylor experience full of fond memories that I will cherish forever, and thank you for sharing your wisdom with me.
