Meet Audrey Broas | Self-Taught Baker & Restaurant Manager

We had the good fortune of connecting with Audrey Broas and we’ve shared our conversation below.
Hi Audrey, every day, we about how much execution matters, but we think ideas matter as well. How did you come up with the idea for your business?
While I was in junior high school, a good friend of mine and I thought we should open a bakery together when we get older. As time went on, the idea really stuck with me. I went to college and decided to major in hospitality and even some took pastry classes in Florence, Italy while doing a semester abroad. When I returned home, my sister’s friend asked if I would make her wedding cake. It was the scariest idea but I went for it. After doing so, I realized that this was actually something I could pursue and it could be more then just an idea.
Alright, so let’s move onto what keeps you busy professionally?
I run my baking company from my home, but I also manage a restaurant here in Dallas. I graduated from college in 2020, a year that was indescribable to everyone. Going into the hospitality world professionally and as a small business at that time was nothing that I could’ve expected. My career took a big chance on the little guy, and it has been the best experience in my life. I have had experiences that I could have never imagined and have met people that have changed my life in so many ways. Working in the restaurant industry is never a 9-5 job, it’s many early mornings and very late nights.
Running my own company while managing the restaurant has definitely brought on its challenges but I could never give either of them up. In doing so, I am able to adjust my schedule accordingly to ensure my best at both life experiences. The amount of all nighters or wedding cake deliveries between work shifts are too many to count but it’s what I love to do.
I have learned to trust myself but to also push the limits. While baking, I only have to worry about myself and the client. So I am able to be as creative as I would like, usually. If my client would like something I have never tried before I am able to say “I have never done that, but let me try and if we love it than I don’t see why we can’t do it.” It lets the clients feel like they get to be a part of the experience and that it not as structured as many big time bakeries can make you feel, and that is how I want people to feel about me and my baking.
Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
My week long schedule gets a little busy so they would be in for the ride! My friends and I play in a sand volleyball league, so they would for sure be coming to our games and enjoying a couple brewskis/brew-ha-has (as my dad would say).
Next would be feeding ourselves. I love food, it is the best conversation starter, the filler of the awkward silence, it can do it all. My favorite places are rise nº1 (French), Sixty Vines (Italian), Nori Handroll (Sushi), Magnolias Sous Le Pont (Coffee), Katy Trail Ice House (Drinks- The Summer Beer is to die for).
Next, we would most likely visit my family, they only live about 30 minutes away, so I frequent trips home (if I didn’t, my mom would may die, she’s living with only boys right now). I have a younger brother who is in high school, so to make this the ideal visit, let’s say the season is fall. Therefore, there would be no other choice than to go to a Texas high school football game! My whole family is in town and we are die hard super fans of my brother and his friends, we are in full high school colors and yelling until we lose our voices and waving all their “Big Head” photos around like it is nobody’s business. Win or lose, all the families go out and have drinks and pretzel bites (we do all qualify ourselves as professional pretzel bites connoisseurs).
After all of that, then when we head home. We watch tv or movies with a late night coffee or wine most likely fall asleep on the couch!
The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
To my family- I always say I have the best and most supportive family out there, but it is really true.
My mom inspires me day in and day out in the culinary world as well as just how to be even half the woman she is one day.
My dad is my biggest critic, he is never afraid to tell me that I missed the mark on something, or will be the first person shouting from the rooftops if I have perfected a recipe.
My siblings are the first people to push me to new limits, to be an entrepreneur and to just believe in myself (also to eat any cake scraps or eat any frosting left over).
To my friends/coworkers- you never fail to make me feel like I am conquering the world. From sending me “I’m so proud of you” emails as a daily reminder, to being my biggest form of marketing, there are and never will be enough words to say thank you!
