Hi Lawain, we’d love to hear more about how you thought about starting your own business?
Having worked in various restaurants, I’ve learned from some of the most talented and passionate individuals in the industry, and I’ve also encountered those who didn’t share my enthusiasm coming to Texas, I’ve realized that many restaurant owners are missing the spark that drives true success, which made me think, this can’t be how this is done I shifted my mindset and focus on opening my own business Turning my passion for cooking into a business has been a dream come true, and I feel fortunate to be able to share my love of food with others.

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
My passion for cooking began at the age of 10, growing up across the street from the renowned Dooky Chase Restaurant in Treme. Under the guidance of Leah Chase, I learned the art of crafting exceptional gumbo, a skill that drives my passion for cooking. I strive to create unparalleled culinary experiences, showcasing my unique taste and style. Although I’ve acquired techniques from esteemed chefs, such as blackening seafood, I attribute my expertise to learning from the best. My migration to the French Quarter led me to Chef Paul Prudhomme, renowned for his blackened poultry and seafood. Furthering my culinary journey, I delved into Italian cuisine under the mentorship of Mark Fontanille and Claude Coach Henderson. Embracing the mindset of a true culinary artist, I continually strive to surpass yesterday’s accomplishments. With a focused and professional approach, I maintain a composed demeanor in the kitchen, driven by my motto: ‘No bitching in the kitchen.’ As Chef Wain, also known as ‘The Stain,’ I leave an indelible mark on the culinary world. As A chef everyday is new day to learn a new lesson
