We had the good fortune of connecting with Hector Vidaña and we’ve shared our conversation below.
Hi Hector, we’d love to hear more about how you thought about starting your own business?
What am I doing? Am I really ready to dive deep into the food industry?
What should our readers know about your business?
Our brisket is unique; we give it a Tex-Mex flavor by using different spices and peppers, yet we stay true to Texas roots by also using salt and black pepper in our rub. We smoke all our meat with Post Oak another Texas tradition. Everything we make is made from scratch. Quality is what sets us apart and it’s what keeps us in business. Making our sides from scratch isn’t easy but I rather our customers enjoy the love and flavor we put into our food. From the three-cheese mac & cheese to our fresh charro beans and also, a fan favorites the potato salad.
It wasn’t easy to get to where we are today. On a given month we are only off 1 weekend a month because we have so many caterings. It’s truly a blessing to have so many customers ask us to provide food for their events.
It all started on the 4th of July 2020. The pandemic was taking over, and we wanted to do something fun with our friends, so we decided to do a cook off. But after Covid started spreading we decided not to. We had purchased a couple briskets and decided to sell plates to those that wanted a Brisket plate with 2 sides. That weekend we sold 50 plates, we had no idea we would sell so much, so we kept doing it. Fast forward to today we have done numerous pop ups and catering. It’s been an amazing experience.
We even competed in the State Fair of Texas 2022 BBQ & Chili cook off. We took 4th place in chicken. With it being our first competition wasn’t bad at all. We are hoping to compete again this year in the State Fair of Texas 2023 BBQ & Chili Cook off. We hope we can place again, that would be pretty cool.
Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
My #1 spot where I take everyone is Mia’s Tex-Mex in Dallas. I’ve been going there since high school. It’s my go to spot, it’s always my spot for the best Margaritas. It’s a must try.
You can’t make a trip to DFW without going to Calisience in Forth Worth. My God Sister Jacqueline makes the best birria in Fort Worth. She also has all the awards to prove it.
Then, of course Pluckers spicy lemon pepper wings with a Batman is a must.
My other favorite spots to visit are Zavalaz BBQ in GP. For tacos, Tacos Al 100 in PG. So much good food in Dallas.
The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
My wife Otilia who does not like the smell of BBQ after smelling so many brisket being made. But she is 100% always supporting when I need her the most she is always there for me. I know she sees the love and passion I have for cooking for others and that I enjoy doing it. I know that’s why she lets me keep it up. My brother Enrique has been my #1 supporter in this journey. When it all started it was just an idea and with his help, I’ve been able to make it all a reality. My sons who know when the smoker is being cleaned it means that snacks are coming. To my parents who have been there since day one. Opening their front yard for us to do pop ups must have sounded like the craziest idea they ever heard. But they went along on the ride with us. My youngest brother Fabian, even though he hates being the “go for” is always ready to help. Doing what needs to be done is the biggest blessing a brother could ask for in a little brother. To all my family and friends, also our new friends that always show support. I’d just like to say THANK YOU! Thank you for always showing up to pop ups or asking us to cater an event we wouldn’t be where we are now without all of you. To the honorary Vidaña Sister my friend Tiffany “Vidaña” Bullock that helps us with every pop up and catering. She helps us push through after long nights of cooking and is the hardest worker in the crew. She’s been doing caterings longer than us. Her insight into the business is what makes us adapt and help change how we do things every day.

This is awesome I met this guy and his briskets and smoked turkeys are amazing
