We had the good fortune of connecting with Nancy Vargas and we’ve shared our conversation below.
Hi Nancy, can you walk us through the thought-process of starting your business?
I’ve had a passion for food since I can remember. Growing up in a family of cooks, just to see the action. I saw a phase, Turn your dreams into wings. So Chicken wings stood out. The creativity starting there.
Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
A transition from the medical profession to the food industry. I looked at it as a leap of faith. I was able to join Smokey John’s & gain aspects for creating. Just having past experience as well working the State Fair of Texas. So much hard work and efforts required. Its definitely not for the faint of heart. 😂 I was part of the creative team for 2019, which we got best taste sweet (Big Red Chicken Bread)and best taste savory (Taco Cone)! My most proud moments next to the birth of my children.
I hope to gain a diversity of people that enjoy creative culinary and giving back to the communities!
Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.

Monday- We would grab breakfast @ TacoDeli.
Dinner @ Bubba’s Home Cooking in North Dallas, best fried chicken!
Tuesday- Grab some tacos @ Taqueria El Si Hay
Dinner- Gonzalez Restuarant, good food and great margaritas.
Wednesday- Rest Day
Late lunch/ dinner @ Eatzi’s. Lots of options.
Thursday-
Hurtado’s Bar B Que in Arlington, Texas.
Dinner- We can venture and find a place to try something new.
Friday- Spa Day @ The Joule
Campisi’s Pizza
Dinner- Taco Lingo
Saturday-
Late Brunch -The Rustic
Cheesesteak House in Dallas. By far the best philly cheesesteak you can have in DFW.
Sunday- Rest Day again anything my BFF wants to see & eat.
