We had the good fortune of connecting with Maricsa Trejo and we’ve shared our conversation below.

Hi Maricsa, what matters most to you?
Honesty. I don’t like people who lie, if you lose my trust it’s hard to gain it back. I am all for second chances but I don’t give 3rds, 4ths and so on. Mistakes you can learn from but lying and being deceitful are learn bad behavior. I make sure I am honest with my team and I expect it back.

Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
My business has relied on me and imagination for a long time. I finally started hiring and training people who fit my hardworking, creative, and crazy expectations. They are the reason we are as successful as we are today. It was extremely hard to create a team, train them and filter all the things that come with managing people. I had to let go of a lot of people who started with us. We hired the wrong people for the wrong positions. We kept them way too long and let them infect others. You can’t be friends with all of your employees and I learned that the hard way. I still go out of my way to help people who work for me and I am honored to be their Pastry Chef. I want people to know that I am not a brand and my story is that of everyone who has helped me along the way. I am a first generation Mexican American who was lucky enough to dream big and have people around her who believed in her.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I would start off by taking them to Houndstooth Coffee shop off Sylvan Avenue and then to Taco Deli for some Tacos! We would definitely have to go see the Dallas Aquarium and the Perot Museum. For lunch we would head over to Carrollton to H Mart for some sushi, Bao buns, and chicken katsu! For fun before dinner, Cidercade is a fun way to spend the afternoon until dinner at Kyodai.

Who else deserves some credit and recognition?
Alex Henderson, this is my Fiance, business partner, and head chef. He has pushed me harder than anyone else in my life. He is the reason I finally started La Casita Bakeshop. He put his career on hold to make my dreams come true and it has forever changed our lives.
