We had the good fortune of connecting with Juan Sandoval and we’ve shared our conversation below.

Hi Juan, what led you to pursuing a creative path professionally?
As a little kids I loved baking and making cakes. As I got older I lost that love. After graduating high school I put school on hold to take care of a family member. I was unsure what I wanted to do. It wasn’t until I got my first kitchen job at Kate Weiser Chocolate making hand panted bonbons that I realized pastry’s and baking was something I wanted to do. I ended up going back to school to get my Associates in Baking and Pastry. I get bored easily so decorating cakes is something that I don’t get bored because there’s always a new design.

Alright, so let’s move onto what keeps you busy professionally?
I started Ed’s Cakery in 2019. There has been ups and downs but I just kept my head up. One thing that I have learned that has helped me is if the customer loves the cake that’s all that matter. I am a little bit of a perfectionist so it can be challenging when you notice small details that your custom don’t see like little air pockets in the buttercream. Seeing the faces of people when they pick up their cake is what makes me happy and proud of what I do.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
One of my favorite thing to do in Dallas is go to Karaoke at the Alamo Drafthouse Theater. Another place l like going to is S4 (Station 4) to the Drag Show. They are really fun to go and have a few drinks. The late place is the Statler Hotel where you can play bowling or have food and drinks. You can also go to the rooftop and take a dip in the pool and see downtown.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
Working at Kate Weiser Chocolate has help me find what I want to do without them I would probably still be workings  retail.
