We had the good fortune of connecting with Charlotte Williams and we’ve shared our conversation below.
Hi Charlotte, where are your from? We’d love to hear about how your background has played a role in who you are today?
I was born in Little Rock, Arkansas and raised in Ellison, which is 20 minutes outside of Pine Bluff. Growing up in a home with 10 children, my mom was always cooking. And we always managed to have a little something sweet after dinner. So my passion for baking is accredited to my mom, Bernice Williams. When I was young, I was very shy and was often found hiding in my Mom’s skirt while she was cooking. To keep me from getting hurt she would let me help even though I had to stand in a chair just so I could see in the bowl. While stirring the batter, half would spill on the table from beating too aggressively, but she would just clean up the mess and say, “keep stirring.” The eggs were never added until I learned to keep everything in the bowl. Seeing the end results of all that work had me hooked!! Today I am the owner of a bakery shop specializing in pound cakes made completely from scratch. Our cakes are insanely delicious, and we are excited to announce that other baked goods such as layer cakes and pastries will also be implemented.
Let’s talk shop? Tell us more about your career, what can you share with our community?
Desserts Only is a bakery shop specializing in pound cakes and other old-fashioned baked good that are made completely from scratch. We use fresh eggs, sweet creamy butter, whole milk and the softest flour we can lay our hands on. No fluff ingredients are allowed.. (no mix, no creamers, no hacks) not even in our glaze. We are committed to quality because we believe your last course meal should be just as delightful as your first. And our commitment is shown in every bite. That’s why ever ingredient is tested for excellence ensuring your family gets the creme de la creme experience.
Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
Special memories with family and friends are never complete without good food. So we would visit small local businesses in the Dallas-Fort Worth Metroplex that I’ve heard many good things about. Such as Pangea Restaurant in Garland, Granny’s Cajun Cooking on Lovers Lane, Hutchinson BBQ in McKinney and Locals Tap and Table on Harry Hines. Of course I would love to cook for my guests but to relax with them I would cater with Chief Joshua Edmerson owner of Open Heaven Catering. I’ve used him twice already and he did not disappoint. A perfect evening would not be completely without visiting Soicydfw in Trinity Grove for water ice and Cookie Society or Vals Cheesecake for something sweet. For sightseeing we would absolutely go to the African American Museum, the Daisha Board Art Gallery and the Dallas Arboretum and Botanical Garden.
Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
I would like to give a special thanks to my daughter, Alexus Polk, for being my number one fan, my cake tester, my marketing and sales lady and my designer. She pushed me to keep going even during COVID. Also a special thanks to my SCORE Mentors Charles Rudnick and Tom Baumgarten and Alexander Helgar from Mesquite Chambers of Commerce for their time and valuable information.
