We had the good fortune of connecting with Bridgette Brouillette and we’ve shared our conversation below.

Hi Bridgette, can you walk us through the thought-process of starting your business?
My initial thought process was one really fueled by this desire to create flavors and things I had never tried before. I was heavily interested in how I can subvert the typical dessert and make it something unexpected, both visually and in flavor. I had to believe I wasn’t the only person interested in a more complex dessert, something that goes beyond cute and sugary.

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
My day job consists of being a modular interior construction specialist. It was definitely a long road to get here too! After graduating high school, I jumped right into a robotics & mechanical engineering degree/internship, and quickly realized this type of work wouldn’t be creative enough for me. I stepped away from that and got a full time job working as a BIM specialist, while going back to school for an interior design degree. And now I’m at my current job! I love having such a diverse background, it gives me a wide range of ideas and methodologies to use that allow me to make my most bizarre ideas come to life.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
If I were to give a friend a tour of all my favorite things in DFW, we’d start at The Salty for the most amazing donuts! We’d walk Bishop Arts, maybe see if we can catch a local market too. We’d do happy hour drinks at Redstix (their sampler platter is also fantastic), and grab dinner from Cris & Johns Vietnamese/Mexican fusion. I think a great way to end a day in DFW is visiting Thursdays on Tap at the Perot Museum!

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
I’d love to shout-out my partner, Eddy, for pushing my palette, being my number one constructive critic and biggest supporter. He’s been with me through the entire journey! I’d also like to thank the women of Dallas Gems, who are always willing to taste test my creations.
