We had the good fortune of connecting with Nicole Solano and we’ve shared our conversation below.

Hi Nicole, what was your thought process behind starting your own business?
My thought process behind starting Mini Bites was really about creating a life that blended my passions with my priorities. I’ve always loved making food that makes people smile, so I wanted to do something I genuinely enjoyed while also having the flexibility to be present with my kids. I also wanted to set an example for them that if you have an idea and you’re willing to put in the work, you can build something from scratch and watch it grow into something that not only brings you joy but also supports your family. Mini Bites became that for me: a creative outlet, a way to connect with the community, and a chance to show my kids what’s possible when you follow your dreams and keep going, even when it’s hard.

What should our readers know about your business?
What sets Mini Bites apart is the creativity and care behind every pancake stack. I’m always taking inspiration from desserts and turning them into fun, memorable creations, and I make each event interactive—talking to guests, making sure they get exactly what they want, and creating an experience they’ll truly enjoy and talk about afterward. I’m most proud of being an example for my kids, showing them that with hard work, you can turn an idea into something real.
Mini Bites isn’t just about selling food—I care deeply about my ingredients, my products, and the experience I give. It hasn’t always been easy, but the challenges have taught me to stay flexible, creative, and focused on my ‘why.’ As a stay-at-home mom who homeschools, I wanted to show them that you can take an idea, work hard, and turn it into something real and successful.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
If my best friend were visiting, I’d want them to experience the best of Denton—especially in October, when the Halloween festivities and the Day of the Dead Festival really bring the city to life. We’d start with the Eastside for the vibes, good food, and some beers, then do some shopping in the Square and browse the Opera House for records and books.
For meals, we’d grab breakfast or coffee at True Leaf, Triptych Coffee, Bonnie Bonnet Bakery, Cartwrights, or Jupiter House. For lunch and dinner, we’d hit Rooster’s Roadhouse, Thai Square, Graffiti Pasta, and check out the food trucks at Eastside and Oak St.Drafthouse.
For the kids, we’d make stops at Two Gentlemen of Verona, FreePlay, and Denton Water Works, and we’d also get outside to enjoy some of the local trails.
By the end of the week, they’d get a full taste of the food, shopping, and fun that makes Denton so creative, vibrant, and memorable.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
My shoutout has to go to my husband. He is my behind-the-scenes MVP. He’s been there from day one, cheering me on, brainstorming ideas with me, and keeping me grounded when my brain starts running a mile a minute. He’s taken days off to wrangle the kids so I could focus on an event, and he’s even jumped in at events himself—helping me with setup, hauling gear, and making sure everything runs smoothly. He’s always ready with advice… or at least a ‘you got this’ when I need it most. Mini Bites wouldn’t be flipping without him. And he’s not the only one. I’ve been blessed with amazing friends and family who’ve stepped in to help along the way, and I’m truly grateful for every single one of them.
