We had the good fortune of connecting with Viridiana Rojas and we’ve shared our conversation below.

Hi Viridiana, how do you think about risk?
We put our savings and gave up a formal job to start a business, without knowing if it would work or not, with fear and uncertainty but without regrets.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
It has been a constant challenge, first because our desserts are street desserts, they are French crepes but with the Latin touch that characterizes us, we started our dream in a food truck thinking first about making ourselves known and knowing if people would like our desserts, we saw that they were well received and that’s how our journey began, at the beginning, like everything, we had one or two clients a day and those same clients recommended us to others, our whole process was organic, it was by word of mouth, our intention was always to give our people a fresh, fresh and different dessert, that was really worth it.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
First to start the day some barbacoa tacos from the Garcias, then I would cross the street to buy a dessert at Las Crepas with an Oreo frappe and we would go for a walk to downtown Garland so he could try the pizza.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
Mainly to our daughters who have walked the path with us of effort, dedication and sacrifice.
