Meet Eva Spak | Founder of Eva’s Cookies

We had the good fortune of connecting with Eva Spak and we’ve shared our conversation below.
Hi Eva, what was your thought process behind starting your own business?
I came up with the idea to sell my cookies in 7th grade. I have been baking for my entire life, and I always loved to bake chocolate chip cookies for my family every week when I was younger. As I grew up, I expanded my creativity and tried baking other sweets like cupcakes and banana bread. When I was in 5th grade, I brought a homemade cookie cake to school for my birthday to share with my friends. They loved it so much that I started to bring cookie cakes to school all the time for other class celebrations too. When I saw how much people enjoyed my cookies, I started to think about selling them. My friends were all very encouraging, and they convinced me to make the business by telling me that they would be my first customers. The idea seemed obvious. I had people telling me every day that they would buy my cookies, so obviously, I started to sell.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
I am the sole employee of Eva’s Cookies. I bake every order, I package every cookie, and I even built my own website (evascookies.com). Eva’s Cookies are not like your average cookie because Eva’s Cookies are served as cookie bars or cookie cake. Eva’s Cookies also offers more than just cookies: I make banana breads, brownies, fudge, and I even take special requests for any items not on my menu! When I have the time, I love going into my kitchen and seeing what happens when I throw random ingredients together and bake them. The pandemic really slowed down my orders, but I have come back stronger than ever. I now sell my cookies in my school’s bookstore. This is probably my favorite way to sell my cookies because my cookies reach a very large demographic of people. I get to walk past conversations of people talking about my cookies at school.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I would start by ensuring that my friend had proper Tex-Mex and BBQ meals, because Texas excels at both. I would take them to Fernando’s for Tex-Mex and Smokey John’s and Soulman’s for BBQ. If my friend had never had Whataburger, then I would surely take them there as well. For activities, my go-to spots are The Galleria, the Fort Worth Stockyard, Six Flags, the Texas State Fair, and maybe a Rangers game at Globe Life Field. As someone under 21 years old, I don’t venture out into the city too often, and I don’t know anything about Dallas nightlife.

Who else deserves some credit and recognition?
I would love to give a shoutout to my mother, Shelby Spak. My mom always had a natural talent for cooking and baking, and she has let me join her in the kitchen for as long as I can remember. She introduced me to my favorite chocolate chip cookie recipe, the very recipe that I use for Eva’s Cookies to this day. She also runs her own jewelry business, which set an example for me that a woman can run and be the sole employee of her own company.
