We had the good fortune of connecting with Victoria-Lee Lewis and we’ve shared our conversation below.
Hi Victoria-Lee, other than deciding to work for yourself, what else do you think played a pivotal role in your story?
The single most important decision I made that contributes to my success was deciding to attend Auguste Escoffier School of Culinary Arts. My infatuation with food and cooking sparked at an early age with influences from all over of the world, but I wanted to build on my skills, confidence, and knowledge of Plant Based cuisine to take my career to the next level. Escoffier gave me a wealth of knowledge with a classical foundation preparing me with tools and techniques I needed to cook with confidence. Encompassed with training in knife skills, Plant Based culinary foundations, approaches to wellness, cultural influences, and the fundamentals of culinary entrepreneurship. I believe that when things are meant to be, paths are made clear and it is easier to follow your dreams. Attending culinary school did just that and was a great learning experience that helped me form professional connections that are invaluable. The perfect balance of discipline and creativity.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
In order to fully appreciate visiting Dallas, Texas you need to experience all the culturally rich diversity it has to offer such as historical buildings, museums, food, distinct southern hospitality, and that everything is bigger in Texas! Day 1: First we’d visit one of the Best Vegan Tex Mex restaurants in Dallas, Casa Del Vegano. Enjoy their Tamales Cakes and unwind with one of their delicious adult beverages. Then go for a stroll at Lake Cliff Park just a few blocks down the street. Beautiful park with lake views, gardens, and surrounded by historical residential buildings.
Day 2: The next morning we’d partake in a morning yoga workout at Klyde Warren Park followed by lunch at The Vegan Food House. The fried lasagna stuffed with house ricotta with savory “meat” sauce is to die for. Later that evening hit Six Flags for some fun, rides, and games.
Day 3: On day three we’d relax poolside at King Spa, a unique Korean inspired spa. Explore each of the 9 healing sauna rooms, get a massage accompanied by manicures and pedicures. After enjoy the delicious vegetable spring rolls they offer as a vegan option. Then enjoy Ladies Night at Billy Bob’s at the stockyards in Fort Worth, Tx. Free country western dance class and a funky good time.
Day 4: A day of exploring three museums I think are a must see when visiting Dallas. The Perot Museum of Nature and Science, Rainbow Vomit, and the African American Museum.
Day 5: Its time to let loose at Pete’s Dueling Piano Bar in Downtown Fort Worth, Tx. Sing at the top of our lungs to all hit songs we know all the words to and love!
Day 6: Enjoy the incredibly beautiful Dallas Arboretum and Botanical Gardens. A lakeside fairytale garden. Followed by some delicious vegan bbq from Da Munchies. Can you tell I like to eat?
Day 7: Hit the Dallas Farmer’s Market for Sunday Funday! Shopping, VEGAN FOOD, fresh produce, and a beautiful nursery. All the best things in one area. A great way to experience the people of Dallas. The environment is alway welcoming and the food always delicious.
Who else deserves some credit and recognition?
I would like to dedicate this to my number one fan, my amazing wife! She is truly a beautiful spirit. She sees the treasures inside me and helps me manifest my dreams. She is by my side when things are tough and she helps me to remember who I am when I doubt myself. She is the reason I cook. She taught me the basics like cooking with the stove light on, lol. All of my close family and pop up friends for all their encouragement, support and love. To all those individual who have entrusted me to cater their event, bake a cake to celebrate a special moment, etc. I love you with all my heart and pray for your continued support, because the SKIES THE LIMIT and THE BEST IS YET TO COME!
