We had the good fortune of connecting with VALERY and we’ve shared our conversation below.

Hi VALERY, we’d love to hear more about how you thought about starting your own business?
Starting The Roll & Berry Co. was truly a leap of faith. God placed this dream in my heart, and I’ve trusted Him every step of the way. My thought process was rooted in both passion and purpose—I wanted to create something that combined my love for baking with my desire to build community. Through vendor markets, pop-ups, and catering, I saw how much joy people found in our handcrafted desserts, and that inspired me to take the next step. With God on my side, I had the courage to turn this vision into reality, knowing that this business is about more than just desserts—it’s about creating joy, connection, and a sense of belonging.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
The Roll & Berry Co. is more than just a dessert café—it’s a family dream that grew from pop-ups, catering, and community events into a brick-and-mortar business. What sets us apart is our heart: every cinnamon roll, crepe, and strawberries & cream dessert is handcrafted with love, creativity, and a desire to make people feel special. We’re not just selling sweets; we’re creating moments of joy and connection.
I’m most proud that we’ve been able to turn a small idea into something that people in our community are truly excited about. From selling out at farmers markets to being invited to corporate events, it’s been incredible to see how our brand has grown. But it definitely wasn’t easy—starting a business comes with financial struggles, long nights, and a lot of trial and error. What helped me overcome those challenges was my faith in God, the support of my family, and a strong belief that this dream had a bigger purpose.
Along the way, I’ve learned that resilience, consistency, and community matter more than anything. People don’t just remember your product—they remember how you made them feel. And I want the world to know that The Roll & Berry Co. is built on family, faith, and a mission to spread joy one dessert at a time.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
If my best friend came to visit for a week, I’d want them to experience DFW the way I do—through food, family-friendly fun, and the places that make this area special. We’d kick off mornings with breakfast at some of my favorites: Our Place Mansfield, San Martin Bakery, El Primos Mansfield, JR’s Grill Café, and for a sweet twist, The Alley Boba Shop or Esquinita Dulcera. And of course, I’d bring them to The Roll & Berry Co. so they could try our cinnamon rolls and strawberries & cream—because sharing my dream is a must.
For outings, we’d spend a day exploring Fort Worth downtown, visiting the Stockyards and Sundance Square, and then swing through Arlington’s The Parks Mall for shopping and people-watching. If we wanted something a little more playful, we’d head to Alley Cats arcade for games, bowling, and laughs. In Dallas, we’d check out the Arboretum, Bishop Arts District, and Klyde Warren Park before catching live music in Deep Ellum.
Food is always part of the adventure—Tex-Mex at Joe T. Garcia’s, BBQ at Heim, and other local favorites would definitely make the list. I’d also take them to a farmers market or vendor pop-up so they could see the amazing small business community here.
By the end of the week, they’d not only have a full stomach but also a heart full of memories—and a real feel for why I love calling this area home.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
First and foremost, I give all the glory to God—His guidance has carried me through this journey. I’m so grateful for my husband Alan, my kids, and my mom Olivia, and all my family who have been my biggest supporters and inspiration. I also want to thank mentors like Kevin Elmore from the SBDC and the amazing local business community that has encouraged me along the way. The Roll & Berry Co. is not just my dream—it’s the result of love, faith, and the support of so many people.
