We had the good fortune of connecting with Toby Tindall and we’ve shared our conversation below.

Hi Toby, how has your work-life balance changed over time?
I have learned over time to delegate a little more. My belief is you show someone your methods, then let them complete the tasks in a way they feel most comfortable. I’m learning to listen to myself more, mind, body and soul. If I need a break, I take it. That’s not to say I don’t tremendously enjoy the fast paced environment of my profession. Its like driving a race car everyday. But a race car needs to make some pit stops.

Let’s talk shop? Tell us more about your career, what can you share with our community?
We have taken “The Big Easy” concept. Our philosophy is to slow things down and savor the moment. Talk to a stranger and enjoy the connection we all share. Look up and be with the hear and now. Mix that in with a good Coffee and some Beignets, helps turn a hard day around. I have been thru a long culinary Journey. For 40 years, I have gone from fast food, to elegant fine dining, to multi unit massive establishments. I have taken bits and pieces of my journey and implement them into my daily operation. Years of work has taken a toll on me, but I have a tremendous support system that keeps me pushing forward. I want the world to know, we all have struggles. We all are walking the same path. Break bread together and help your brothers and sisters with their own walk.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
I love to just go! No agenda, no schedule. My favorite memories are of just exploring new places, talking to random people. Finding great establishments (always look for a crowd). One of my favorite trips was taking a long trip from Sabine Pass to New Orleans in an RV, Stopping to fish, eat and drink all along the way.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
My Wife! She supports all of my wacky ideas!! My Daughters! They stand beside me, our business and our home. My Mom! Always there to help me see a different perspective. Everyone I have ever worked with! I have gained invaluable knowledge from each and every one.
