We had the good fortune of connecting with Terrence Sims and we’ve shared our conversation below.

Hi Terrence, where are your from? We’d love to hear about how your background has played a role in who you are today?
I am from New Orleans, Louisiana the side of the Mississippi River we call the “Westbank”. I grow up in a area called Algiers by my single mother along with my older sister. My mother worked extremely hard to make sure she could provide the best us when she was able. My upbringing was somewhat normal to me as a kid, although we had hard times the strength and love my mother possessed got us through anything. Watching her keep going no matter what even on those hard days impacted me in a way that pushes me to never quit or give up on not only my dreams but myself. Before she leaves this world I want her to know and show how much she has given to strength wise without even knowing she did.

Let’s talk shop? Tell us more about your career, what can you share with our community?
I am in the art of food creation. I’ve always loved to cook, since I was a young kid. Being in the kitchen gave me peace because not everyone cared to be in the kitchen unless for food to eat rather than cook lol. I was able to free my while also satisfying my taste buds and creating meals that I liked and other would love. It took me many trials and errors but once I learned the basics the love grew even more. What may set me apart from others cooks or chefs is that I cook with patience and love first, I found that when you actually create meals with love it reflects in the taste of the food. I got to where I am not by working hard, learning from my mistakes, and great lessons from amazing head chefs. It wasn’t easy in the beginning especially being that I didn’t attend college like most that I met but going back to the strength I was raised around it pushed me to not give up. One main and important lesson I learned is patience, when something doesn’t come out the why you expect don’t be so ready to give up. Try again and again until it’s right. What I want the world to know about my brand PVO KITCHEN is that I plan to expand beyond just creating food but also cooking apparel such as aprons, oven mitts, etc. and everything that’s make from brand come with Positive Vibes Only.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
Honestly I’m still leaning new places myself lol. We’d definitely hit one of my favor sushi spots for happy hour in arlington called Piranha Killer Ramen, the food is delicious and drinks are nice as well. I also like to do fun activities so maybe checkout Main event for bowling, axe throwing, some mini or top golf. My best friend is very much a go with the flow type of person so we could pretty much do anything and have a great time.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
I would like to first start by shouting out my mother Theresa Sims, for giving me all the tools, love and strength I need to push through and accomplish my goals. For ALWAYS being there when I needed someone, even to this day. My grandmother who passed in 2017 but always showered me with love and gave great advise, she another reason why I push myself so hard. There’s a lot of ppl I wanna name because I was fortunate enough to have a small village of people who love me more than I loved myself at times. When it comes to my career in becoming a chef, again there’s a lot of people I wanna shoutout but the main organization that deserves a shoutout is the House of Blues both New Orleans and Dallas locations. I learned most of everything I know about food from working there and meeting some amazing chefs and cooks whom I’ll never forget and will always appreciate.
