Meet Red Fajardo | Food Blogger & Registered Nurse


We had the good fortune of connecting with Red Fajardo and we’ve shared our conversation below.
Hi Red, looking back, what do you think was the most difficult decision you’ve had to make?
Change. Yes, changing for the better is the most difficult decision I had or anyone would ever had to make but the most fruitful one. Change is easy to say, comfortable to think about and unchallenging to tell everyone, but what’s tough is taking that first step and being consistent while every chapter of your life demands a different you, at the end it’s 110% absolutely worth it. It’s an uphill battle we need to take, oceans we need to swim through, but let’s be thankful for the thorny problems, tough times and moments in our lives for they have made you, made us. Sometimes we have to take the leap of faith, an adventure into the unknown, it may seem agonizing but as long as you don’t quit and accept every challenges along the way, you’ll make it to where you want and need to be.

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
Being a registered nurse is fun, exciting, unpredictable and tough yes but I love being in this profession and field I’m in. It’s challenging being one during the era of the pandemic but I appreciate people who are grateful for what we do and for that it made me more determined to do better in doing my job. I love being a registered nurse and a food blogger at the same time, it’s been so exciting every single day.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
Dallas has my heart and will love it forever in my life. The city itself is growing especially in terms of food, places to go, parks and a lot of exciting, fun events happening. I would say for this city you wouldn’t want to miss and leave town without trying some of the best Texas BBQ in town with Pecan Lodge, Hutchins BBQ or Cattleack BBQ. Deep Ellum is expanding and growing with such good hangout bars we could share a drink with friends. The Trinity Overlook Park is the best view you would ever have to see the whole city of Dallas. I love Asian food so Carrolton and Richardson are mainly the places to search up a good one. Go check out a Dallas Mavericks game at the AA Center or visit the best museum in town called Perot Museum. Dallas almost have everything and I love seeing this city prosper.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
First big shoutout to God that has been there for me 24/7 since the day of my birth, while we go through rough paths or be at the happiest moments of our lives, He’s always there to support, guide and shower us with His blessings and never lets us down. Secondly to my family who’s been a major factor of what I have become now, the person I am today and for pushing me to be stronger each and every single day. To my relatives and friends who are true and through thick & thin just one call away to help. Lastly to the foodie community that I adore so much, brings nothing but positive vibes. I didn’t expect to meet so many people in this world that I now call family and brothers.
