We had the good fortune of connecting with Nicole Chan and we’ve shared our conversation below.
Hi Nicole, can you walk us through the thought-process of starting your business?
I discovered my love for baking at a young age and I’ve always enjoyed sharing my baked goods with friends and family. So, with encouragement from my family, I started Fat Cat Bakeshop. My goal with the business is to make delicious things that are familiar and comforting yet new and exciting. That’s why I decided to make mini cube cakes. Our flavors are inspired by a lifelong fascination with food from around the world and the foods I grew up eating. I hope that our treats bring people joy, give them a sense of nostalgia, and spark a new discovery.
Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
I take pride in our cakes. They are made with high-quality natural ingredients, We never add any preservatives or additives which is why we always recommend enjoying our cakes as fresh as possible on the day they are purchased. Besides that, we change our flavors every month to get people excited about what flavors we come up with next. It’s also been a lot of fun experimenting with a variety of flavors and creating different toppings for our cakes.
If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
If my best friend is visiting DFW, I’d ensure they have the best time ever! To start the day off, we’d get some pastries at Cremcrittos Patisserie and coffee at White Box Roastery in McKinney. For lunch, we’d go to Hutchins BBQ. After that, we’d explore the Bishop Arts District, and visit the Arboretum or Legacy West in Plano. For dinner, we’d have ramen at Ichigoh at Deep Ellum or Ari Korean BBQ. finally, we’d have desserts at Botolino Gelato and go enjoy the downtown skyline at Trinity Overlook Park.
Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
I wanted to dedicate my shoutout to my family! They’ve been so supportive since day one. Starting a business is not easy in the beginning but I’m grateful that they are there to provide feedback and encouragement. Without them, Fat Cat Bakeshop would not be anything like it is today.
