We had the good fortune of connecting with Lisa Schlaht and we’ve shared our conversation below.
Hi Lisa, can you walk us through the thought-process of starting your business?
I had a desire to bake, breads specifically. After 15 years behind the chair doing hair it was peaceful & quite alone in the kitchen just me & mixer.
I realized I wanted to make this into something & started to think about what I could offer my community that it didn’t already have. It came to me easily, Bagels. I grew up eating them almost daily & absolutely love them. Whenever we travel I find the best bagel shops to try out. Here in NE Texas there isn’t many bagel shops & here in Paris we are the only one.


Alright, so let’s move onto what keeps you busy professionally?
I make bagels with a wild yeast starter. This is for depth of flavor & for the health benefits of sour dough has for our gut health.
I started out simply setting up a booth at the our farmers market. I knew after the first month I wanted this to grow into something much bigger.
By the end of that first year we had bought & converted a food truck & started slinging bagels. I wanted to set us up to grow into a brick & mortar & eventually have multiple locations around our area. From day one we offered online ordering & to this day it represents 35% of our sales annually.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
We would spend a Saturday starting with brunch at the bagel shop. Then stroll around our downtown square for the afternoon.
We would check out one of our yummy restaurants for dinner then go watch live music & have drinks.
Sunday we would take a drive up to Broken Bow, OK & spend a couple days on the river & exploring the area.
Wednesday & Thursday we would spend the days in the bagel shop showing them all that we do & nights eating and talking. Friday would be a trip to the metroplex for shopping, eating out & checking out the night life before their return trip home on Saturday.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
My husband Curtis is my ride or die. Every time I run into a problem weather it be baking technically or needing something custom built he is there. We talk it through & solve the problem.
