We had the good fortune of connecting with Kasey Headley and we’ve shared our conversation below.

Hi Kasey, can you walk us through the thought-process of starting your business?
The idea of a coffee house is one that I fell in love with only after being at Palace Coffee Co. in Canyon, TX. I found this as a place that people need in their community. Whether you are meeting with clients, or you are all alone in college and you just need a place to be. The coffee house stands for not only a place to enjoy a delicious beverage, but it is a place for people to interact, converse, meet new people and even catch up with old friends. I wanted to be the catalyst by starting a coffee house in smaller towns that could really benefit from having a common meeting place. No matter the size of town, there is a community there that needs a place to call their home away from home, and I see that is what the coffee house is there for.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
The White Rabbit Coffee House is a place that focuses on being a staple place in the community while creating unique drinks to keep the imagination going. The White Rabbit was born from an older coffee shop that was about to close it’s doors, but when me and my business partners heard about that, we were in shock. We came to eventually take over the business, run it for a few months, then close it’s doors for about 10 days while we remodeled and rebranded the cafe. The change of identity was one to coincide with what we had envisioned for a coffee house to look like and what we wanted to represent in the world. The simplistic and artistic nature of The White Rabbit was one that wanted to highlight through exposed wood, abstract art, green plants, and black accents.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
We would start the morning with having coffee & breakfast at The White Rabbit. The Usual Food Co serves breakfast and lunch inside of the coffee shop. We would then head to downtown Denison to another local coffee shop, 410 Collective + Coffee. Grab lunch at Frank & Lola’s Taco Shop. Go play around of disc golf at one of the best courses in Texas, Munson Park. We would head back to Sherman, and go to 903 Brewers for a pint and some food. Finish the night in downtown Sherman at Ash & Barrel with a cigar and an old fashioned.

Patrick Burns from Palace Coffee Co., Roman & Amy Leal from Evocation Micro Coffee Roasters, Matt Fisher from Voltage Coffee Project, and Natalie Popplewell from 410 Collective + Coffee all have been a huge influence on shaping me and making me the professional that I am today!
