We had the good fortune of connecting with John Wayne Shaw and we’ve shared our conversation below.

Hi John Wayne, can you walk us through the thought-process of starting your business?
With manufacturing and in the restaurant industry for over 20 years, we decided if we were going to break our backs, we were going to do it for us! 12 hour+ days do t hurt as bad when you’re doing it for yourself.

Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
I started on dish in a restaurant called Montana in Stephenville TX. back in 1999 and after seeing the curtain pulled back on this pirate ship of organized entropy I was hooked! Gradually working my thought process and ability to wrap around what I wanted to do as a cook.

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
Man! So many good ones in our area and hope they are hungry and have a few days! I’d say Black Cat pizza for pizza, Panther City BBQ bbq, Wishbone and Flynt for ambience and great speak easy, Nicke city for Drinks, Wild Acre, Martin House, Panther Island for beers, Avoca and Arcadia for coffee…. DAMN! I could go on!

Our wives and family that believed in us from the beginning and are behind the scenes in all the builds and cooks.
