We had the good fortune of connecting with Jenny Larsson and we’ve shared our conversation below.

Hi Jenny, we’d love to hear more about how you thought about starting your own business?

I was diagnosed with Celiac Disease when I was fifteen. This was back in 2006, before anyone talked about gluten and the gluten free product options were few and far between! Unfortunately, after adopting a gluten free lifestyle, I still delt with various health conditions in my teens and twenties. After years of doctors’ visits, restrictive diets, etc. I finally realized that the root cause of everything I had been dealing with was inflammation and an unhealthy gut.

After doing a lot of research and adopting an anti-inflammatory diet, I was finally feeling better than ever. However, I noticed there was a huge gap between what was being marketed as “healthy” at the grocery store and what was actually a safe choice for consumers. Having experienced firsthand the power of clean eating, I made it my mission to bring more anti-inflammatory, gut-friendly options to the market. Through Belly, I’m determined to share my health journey and be a resource to others living with similar health issues.

Alright, so for those in our community who might not be familiar with your business, can you tell us more?

At Belly, we manufacture a line of collagen-infused baking mixes. Collagen is an amazing supplement because it supports everything from healthy hair skin, skin and nails to muscle support and recovery. But the main reason we love collagen is because it’s a gut-health superfood and supports the lining of the digestive tract.

Additionally, all of our products are gluten, grain, dairy, soy and nut free. We never use chemicals, preservatives or natural flavors, and we sweeten our products with coconut sugar. At Belly, we’re determined to help you eat your way to better health and enjoy every bite along the way!

Let’s say your best friend was visiting the area and you wanted to show them the best time ever. Where would you take them? Give us a little itinerary – say it was a week long trip, where would you eat, drink, visit, hang out, etc.
I am a HUGE fan of the Dallas Farmer’s Market. I’m originally from Portland, OR, so whenever we have friends or family visiting, the farmers market is always a must-see. I love supporting local brands and the food is always a 10/10. Being from Oregon, the stock yards are also a fun adventure. Between the long-horned cattle, the shops and of course, BBQ, it’s a pretty big culture shock to anyone visiting from other parts of the country. Finally, I live in the Lower Greenville neighborhood which has so many amazing bars and restaurants. A morning matcha at LaLa Land followed by live music at the Truck Yard and Dinner at Terilli’s always makes for a fun day.  

Who else deserves some credit and recognition?
I’m super lucky to have a husband that believes in me and my goals, even more than I do! In fact, if it wasn’t for my husband, I never would have started Belly. He gave me the confidence I needed to take the initial steps to start this company. And now, as much as I’m driven by own goals, I’m excited to make him proud and am grateful for his support every step of the way.
