We had the good fortune of connecting with George Chavarria and we’ve shared our conversation below.

Hi George, we’d love to hear more about how you thought about starting your own business?
When I created Salty cow It was at the height of COVID-19 and everything was shut down everyone was quarantined ordering out fast food and trying to stay calm. I wanted to bring “normal” to people something they could enjoy in house take the stress out and hopefully for a few seconds just relax.

I have been in the culinary world for 16 years learning the whole time I asked questions to further develop my understanding in areas where I was not well versed. Being vulnerable allowed me to let others into my life to help me where I needed a little uplifting. I took those flavor layering techniques and applied them to our boards. The market is becoming saturated with charcuterie minded people, and being flexible keeping an open mind letting the public tell you what’s working and what’s isn’t working, and not being too terribly attached to one outcome or another

My goal was not only to understand the needs of my customer but more importantly to provide them with a lasting culinary experience. I treat every order with the same care I would if I were sending a special gift to a friend or family member. Every order is fulfilled with love and an attention to detail.

Can you open up a bit about your work and career? We’re big fans and we’d love for our community to learn more about your work.
My love for culinary started at a young age learning for my grandfather which I still to this day use his recipes and techniques. I always find a way to honor him in my boards.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
The Fort Worth area is an ever expanding culinary and nightlife destination, but I would definitely start at Stockyards how could you beat the cattle drive, bar hopping, one of Tim Love’s dining experiences and finish off at the worlds largest honky to keep bar Billy Bobs.

Shoutout is all about shouting out others who you feel deserve additional recognition and exposure. Who would you like to shoutout?
It all starts at home my wife of 16 years Yuliana always being my biggest fan. She is constantly supporting and letting me know that I can when in times when I just think I can’t.
