We had the good fortune of connecting with Darrin Morrison and we’ve shared our conversation below.

Hi Darrin, maybe we can start at the very start – the idea – how did you come up with the idea for your business?
The idea of our signature grilled cheeseburger started when my children were young. Like most kids, they were picky eaters and gave me strange requests, and one day they both wanted cheeseburgers but they refused to eat the buns. So, I improvised: I made them cheeseburgers on grilled cheese bread and it immediately became one of their favorite meals. My nickname has always been Big D, so once my kids were older, it changed from Dad’s Special Cheeseburger to Big D’s Grilled Cheese.

The last few years left me with medical scares, and I was out of work for more than two years when I finally got my liver transplant. As soon as I started feeling better, my wife and I decided to open up the dream I had been telling the kids about for years. We bought a trailer and an LLC and opened up Big D’s Grilled Cheese for everyone to experience.

Can you give our readers an introduction to your business? Maybe you can share a bit about what you do and what sets you apart from others?
We pride ourselves on being a food truck that has a menu all children love. Whether it’s a grilled cheese, grilled cheeseburger, nachos, or tomato soup, there’s something for every picky eater out there. Our brand is simple, just like your parents’ grilled cheese sandwiches. The best things in life always are. Buttery Texas Toast, melty cheese, and zesty tomato soup: there’s nothing more nostalgic than that.

Any places to eat or things to do that you can share with our readers? If they have a friend visiting town, what are some spots they could take them to?
I’ve always been a fan of neighborhood bars and the people that make them up. My favorite spots are HWY Bar, Stumpy’s, and Marie’s Pearl’s Cherokee. Everyone is welcoming, the bartenders take care of you, and there’s great local music on the weekends. I’ve always been a simple man (hence the grilled cheese food truck), and nothing beats a local bar.

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
My children may have inspired the food, but I wouldn’t be here with my wife Jackie’s unlimited support and love from the past 30 years. She’s helped me through hospital visits and celebrated with me on cruises after. Without Jackie, this dream would never have come true. This shoutout is for her and all the good things she does for me every day.
