We had the good fortune of connecting with Courtney & Stacey Moeslein and we’ve shared our conversation below.

Hi Courtney & Stacey, maybe we can start at the very start – the idea – how did you come up with the idea for your business?
We devised the idea for our business through conversations with our co-workers. When we worked in office environments, our co-workers often commented on how delicious our lunches smelled and would ask for the recipes. Because many of the recipes were traditional family recipes or healthier twists on our favorite recipes, we knew we needed to start documenting the recipes to share. The two of us began learning more about food photography and blogging. We decided to take the leap during quarantine and have been on the blogging journey ever since!

Alright, so for those in our community who might not be familiar with your business, can you tell us more?
We set ourselves apart by using simplistic all-natural ingredients to help the everyday home cook elevate their everyday. We understand the demands of everyday life and strive to create recipes that are simple conversation starters around the table. We love that we can pay homage to our Louisiana roots, and we hope others have the same joy when creating our favorite recipes.

As the famous quote from Theodore Roosevelt goes, “nothing worth having comes easy.” Creating a food blog and brand has come with its own set of challenges. We invest a lot of time in perfecting everything we put on our blog. In addition, we had no photography background, so we continued to learn a new skill set along the way.

We want the world to know the love we have for our food. We both strive to live healthy lifestyles, and our recipes reflect our desire to show that southern food can still be healthy. We hope others will try our recipes and share in our love for Cajun and healthy cuisine.

If you had a friend visiting you, what are some of the local spots you’d want to take them around to?
While we are new to Dallas, we love entertaining and exploring the city. Instead of going to the same places each time, Courtney has a categorized checklist on her phone of various restaurants and patios to try around town.

If our best friends visited us in Dallas, we would kick the weekend off with our favorite Tex-Mex and Margaritas. We are currently loving Joe Leo’s off of Fitzhugh. Assuming its Fall, we would spend Saturday in Waco watching Baylor football (Sic ’em Bears). We would end the weekend by cooking our favorite meals from our blog. Our New Orleans Jambalaya (https://thesouthernspoonful.com/new-orleans-jambalaya/) is always a crowd favorite and is so easy to create.

We both enjoy history, so we would try out some of the museums throughout Dallas and spend time catching up the best way we know how – with delicious food and drinks!

The Shoutout series is all about recognizing that our success and where we are in life is at least somewhat thanks to the efforts, support, mentorship, love and encouragement of others. So is there someone that you want to dedicate your shoutout to?
