We had the good fortune of connecting with Ashutosh Acharya and we’ve shared our conversation below.

Hi Ashutosh, can you walk us through the thought-process of starting your business?
There is a demand for Indian food as people have started to open up to try different kinds of cuisines. However, there are still some people out there who are scared to try Indian food thinking that its very spicy or they dont know much about it so dont want to try it out. We want to present Indian food to our customers in the way they are acustommed to and make it mild and flavorful so that it can be enjoyed by everyone.

What should our readers know about your business?
We want to present Indian food to our customers in a way they are acustommed to, like pizza, bowl, wrap, dumplings etc and make it mild enough so that everyone can enjoy them. Majority of our customers are not Southeast Asians. When we see a family with little kids come to our restaurant and eat our food for the first time and tell us that they love it, that makes us very happy and gives us motivation to work harder. We did have difficulty during the COVID period but we survived. We had to take EIDL loans and grants from the government to sustain our business during those difficult times. Also due to labor shortages we had a hard time finding good team members. When we found some applicants, they were asking a lot of money which we couldnt afford. Shortage in staffs led to decline in customer service and quality of food and we lost a lot of business. We are still recovering from that. We didnt increase our food prices by a lot as we want to make our food affordable to our customers. What we have learnt is that in todays market where the inflation is through the roofs and there is still a labor shortage, simplifying your menu, automating where possible and reducing dependency from specialized labor are the most important factors from operations perspective. From Customer Service perspective, small gestures like greeting the customer, smiling, talking to them and asking how was their day or how they loked their food goes a long way.
